
A Winter Indian Dinner by St Georges
Our chef Francky grew up in a small village in Goa. He grew up in the kind of place where jackfruit grew outside the door and rice paddies stretched as far as you could see. A proper farm boy — and it’s where his love of growing things and cooking them was first seeded.
This year he’s not going home. So instead, he’s bringing that food here — the flavours of his mum’s kitchen, the spice and slow heat of the cooking he grew up with, landed in the middle of a Hawke’s Bay winter.
But this dinner isn’t just Francky’s story. Across our kitchen and our floor, we have a team who carry their own Indian heritage — their own family recipes, their own memories of food cooked by people they love. Garden to Tiffin is all of that at once. Many hands. Many tables. One dinner.
The menu is built around what our garden and Hawke’s Bay does best in winter — seasonal produce at its peak, with Indian spice woven through every course. The garden is the starting point. The tiffin is where it all lands.
